  • 175g unsalted butter, chopped
  • 1 cup caster sugar
  • ¼ Cup Honey
  • ¼ teaspoon ground Cinnamon
  • 1 egg. Lightly beaten
  • 1 teaspoon vanilla extract
  • 2 ¼ cups self-raising flour


stir butter, sugar, honey and cinnamon in medium saucepan over low heat until butter has melted and mixture is smooth remove from heat and transfer mixture into a large bowl. Cool to room temperature stir in egg, vanilla extract and flour. Roll tablespoons of mixture into balls. Place 4cm apart on two oven trays lights with baking paper and gently flatten with fork. Cook 2 batches at 180°C, for 12 minutes or until golden brown. Allow to cool on trays
